Night 7: Silver Fizz

A classic gin cocktail originating in the late 1800s.

2 oz Portage Gin
.5 oz fresh lemon juice
1 teaspoon sugar
1 egg white
Club soda

Combine gin, lemon, sugar, and egg white in a cocktail shaker with ice and shake vigorously. Strain cocktail into one tin and discard ice. Shake again without ice. Pour contents into glass. Top with club soda.

Tips: Shaking the cocktail in a circular motion better aerates the egg white and creates a frothier drink. Similarly, using a coil from a cocktail strainer in the second shake will help as well.

For a some seasonal variety, use a couple drops of aromatic bitters, such as Angostura, and/or substitute sparkling apple cider for the club soda!
