Proving everything is better with rum. Our Colombian rum, aged in ex-bourbon barrels for 12 years, is stirred with a house-made orange syrup featuring Madagascar vanilla, star anise, and black peppercorn, Angostura & Regan's Orange bitters, and garnished with an orange peel.

Brightwater begins with organic evaporated sugar cane juice, organic molasses, wine yeast and pure Sebago Lake water. Double distilled in our small batch copper pot, this smooth and flavorful rum mellows in stainless steel tanks before it flows into the world. Brightwater’s hibiscus, cacao and lemongrass notes play well in cocktails like daiquiris and mojitos, but this is one silver rum smooth enough to sip on its own.

Although Mainers have been making rum with molasses since the early 18th century, we believe Acadian is the first cane juice rum ever produced in Maine. Grassy and vegetal with a citrus spark, Acadian is designed for cocktails featuring agricole and cachaça style rums, like Ti' Punch and Caipirinha.

Portage is a different take on traditional gins, developed by blending twelve botanicals to create a nuanced and distinctive gin expression. Distilled from our organic sugarcane spirit, this American gin features a swirl of bright botanicals like lemongrass, grapefruit peel and coriander balanced with a savory backbone of sumac and cubeb berries. Portage is a versatile gin that plays well in a range of cocktails, from classics like the martini and the gin and tonic to new creations that are just waiting to be discovered.

Stone Pier fuses the clean cane flavor of our own pot stilled Brightwater rum with the smooth, tropical depth of a five-year-old column still rum made by a family distillery on the Caribbean coast of Colombia. Amber in color, with aromas and flavors of banana, dried fruits, orange peel and vanilla. Stone Pier is a versatile rum that can be enjoyed on its own or in spirit-forward cocktails like Old Fashioneds and Manhattans.

Oaked Acadian starts with our agricole-inspired rum. Distilled from cold press Louisiana sugar cane juice. Aging the spirit in our own used rum barrels adds balanced notes of vanilla, banana, mango, and spice. Made for smooth sipping and easy mixing, enjoy Oaked Acadian neat, on the rocks or in any cocktail featuring aged spirits. Two dollars from every bottle sold is donated to Friends of Acadia.

In the early days, we experimented with a variety of barrel profiles to find the ideal barrel to best complement our rum. During that R&D process, we set those aside the best ones for longer term aging. Beginning with vanilla & dried apricots on the nose, followed by notes of raisins & pecan pie on the mid-palate & ending with a long finish of toffee, crème brûlée & baking spices.

This molasses-based rum was aged for 4 years in a combination of new American oak, ex-apple brandy, and ex-white wine barrels. In a callback to our 2nd Working Title, a 30-70 apple brandy to white wine barrel blend, WTIV inverts that ratio, in a complex expression reminiscent of a single malt whiskey. The tasting experience begins with ripe apples on the nose, moves through smoky vanilla and caramel in the mid-palate and lingers with a finish of chestnut and dried fruit.

‘Chando 12 is column distilled under the supervision of a maestro ronero (rum master) with over 40 years of experience. The spirit then rests for twelve years in ex-bourbon barrels under the Caribbean sun. This rum is the rich color of toffee in the glass, with an aromatic nose of leather and coffee, opening with flavors of dried fruits and a long, smooth finish of caramel and vanilla. ‘Chando 12 can be enjoyed like other premium spirits - neat, on the rocks, or in spirit-forward cocktails.

Nightwater starts with organic, fancy-grade molasses. After distillation, it’s aged in new, charred & toasted American oak barrels for 10-12 months. It is then blended with just the right amount of our Brightwater silver rum to complement the oak & a dash of organic molasses. Notes of coffee, dark chocolate & molasses makes this the rare dark rum that can be mixed with ginger beer, used in a more complex cocktail, or enjoyed on its own.

Merrymeeting begins with our organic Brightwater rum, slowly macerated in a former Jamaican rum barrel with a layered swirl of real ingredients including vanilla, makrut lime leaves, cinnamon, ginger, and Szechuan peppercorn, lightly sweetened with raw cane sugar and beetroot. Merrymeeting is a balanced complement to cola, tonic, or ginger beer, but also has the range to elevate a more complex cocktail.
